Blueberry, Mint & Honey Tea/Infusion

Fully entrenched in wild Maine blueberry season, and summer’s heat finally upon us, we needed something cool and refreshing to quench our thirst.  With wild Maine blueberries abounding, and fresh mint growing outside the kitchen door – the two seemed like a perfect match.  No caffeine, pure fruit, fresh mint and a spoonful of honey-a perfect way to wet the whistle.

An infusion is usually just herbs.  Tea is well, tea.  Herbal tea is usually herbs, flowers or dried fruit in a teabag or a tea strainer.  We used herbs.  We used fruit.  We used boiling water.  It’s so confusing-so we called it both a tea and an infusion.

Serves: 6 Cooking Time: 1 hour

Ingredients

  • 1 pint fresh or frozen blueberries
  • 2 sprigs fresh mint
  • mint for individual garnishes, if desired
  • 1 TBSP honey
  • 4 cups boiling water
  • ice

Instructions

Boil water.

While water is coming to temperature, place berries, mint and honey in a heat proof pitcher.

When water is ready, pour over berries and mint.

Steep for 30 to 60 minutes. The longer it steeps, the more flavorful the drink will be (leave overnight for really pronounced flavor).

After steeping time is completed, top off the pitcher with ice.

To serve:

Fill individual glasses with ice.

Pour blueberry tea/fusion over the ice.

Garnish with mint leaves.

Notes

If the pitcher being used does not have a built-in strainer, use a small strainer when pouring.
