LEFTOVERS: Spaghetti and Cherry Tomatoes-1

Ever wonder what happens to blog leftovers, or leftovers in general? They usually get consumed in a slightly different fashion than the blog recipes. So instead of just consuming them, we have added a new section – LEFTOVERS. One word says it all. Frequently we buy ingredients in bulk, or we make too much of something to eat in one sitting, and we figured that more than likely many of you have the same dilemma. So we started with the cold bowl of leftover spaghetti.

Leftovers as a way of life.

Sometimes the leftovers are reheated or served cold. Frequently they are morphed into something else, hence a new recipe evolves! The remains of a tuna salad can become the base for a Salade Niçoise. Grilled chicken breast sliced thinly and layered on fresh foccacia with a pesto mayonnaise sauce. And lasagna, well it will probably be leftover lasagna just reheated. But lasagna when it comes out of the microwave (yes, we have one), or the oven, holds toghether and the top is so crispy. Pick it up with your fingers and nibble it straight away. Between that and cold pizza is the toss-up on what’s the favorite thing to have a day later.

Spaghetti & Cherry Tomatoes Leftovers!

Serves: 2-4
Cooking Time: 15 minutes


  • leftover pasta
  • quartered cherry tomatoes
  • 4 TBSP grated Gruyère Cheese
  • freshly grated pepper
  • EVOO, as needed



Reheat pasta in a non-stick skillet over medium heat.


Add extra EVOO as needed.


Wash and quarter tomatoes.


Grate the cheese.


Once pasta is heated through, place in a serving dish or on individual plates.


Divide the tomatoes evenly among the plates, sprinkle cheese, add a few twists of freshly ground pepper.


Voilà - Leftovers!
